FENNEL, GRAPEFRUIT AND MINT SALAD 
(Salade de fenouil, pamplemousse et menthe)


As London is in summer mode today, I was looking for something fresh, a kind of salad I use to have during my 2 months in the South of France... For a strange reason, I had two ingredients in my mind : grapefruit and mint! So I articulate my salad around these two for a lovely balanced mix! Enjoy...


Wine pairing : Aveyron d'Estaing (White) from the South West.





FENNEL, GRAPEFRUIT AND MINT SALAD 
A quick glance in your kitchen...

In your fridge
Fennel
Cherry tomatoes
Pink grapefruit
Mint leaves
Rocket salad

In your cupboard
Almonds
Tahini
Olive oil


FENNEL, GRAPEFRUIT AND MINT SALAD 
Serves 1


A little piece of fennel (grated) 
4 cherry tomatoes cut in half 
4 pink grapefruit segments 
A few mint leaves 
1 handful of almonds nuts 
1 handful of rocket salad 
Olive oil
1 tbsp of tahini 

On a bed of rocket, arrange the grapefruit segments with the tomatoes, the fennel and the mint 
Sprinkle with the almonds nuts
Toss to combine with olive oil and tahini. Serve. 



Salade de fenouil, pamplemousse et menthe



Pour 1 personne 
1 petit bout de fenouil rapee
4 tomates cerise coupées en deux
4 suprêmes de pamplemousse rose
Quelques feuilles de menthe fraiche
1 genereuse poignée de salade roquette
Quelques amandes
Huile d’olive
1 CAS de tahini

Sur un lit de roquette, disposez les suprêmes, les tomates ainsi que le fenouil.
Ajoutez la menthe et les noix.
Assaisonnez avec l’huile d’olive et le tahini.
Servez sans attendre !
