With the lovely and gorgeous British asparagus I have seen on the market last week combine with the dreadful weather we had in London recently, I thought straight away about a very easy recipe : the famous asparagus the Flemish way. This Belgian specialty from Louvain or Malines (obviously prepares with Malines Asparagus ;), is terribly yummy. A kind of mix with a beurre blanc and a mimosa recipe. It's the perfect dish to ease your nights supper dilemma...

Wine pairing : Arbois (White) from Jura.





ASPARAGUS FLEMISH STYLE
A quick glance in your kitchen...

In your fridge
Lemon
Butter
Hard boiled eggs
White or green asparagus
Parsley
Rocket salad
Tomatoes on the vine


ASPARAGUS FLEMISH STYLE
Serves 2





Half a lemon juice
80g 2,82 oz of butter
3 hard-boiled eggs
12 asparagus
A little handful of parsley finely chopped

Bring to the boil water for the asparagus.
Cook them for 10 minutes.
Meanwhile, in a little saucepan, gently heat the butter with the lemon and parsley.
Stop the heat.
Mash the egg with a fork and add them to the saucepan.
Place the warm asparagus on your plate and spoon over the eggs sauce.
Enjoy!



Asperges à la flamande


Pour 2 personnes 
Le jus d’1/2 citron
80g de beurre
3 œufs durs
12 asperges
1 petite poignée de persil ciselé
Salade roquette
Tomates coupées en quartiers

Cuire les asperges 10 minutes dans de l’eau bouillante salée.
Pendant ce temps, réchauffez dans une petite casserole, le beurre avec le jus de citron et le persil.
Stoppez le feu avant ébullition.
Ecrasez les œufs et les ajouter dans la casserole.
Servez les asperges en les couvrant de la préparation aux œufs.
Régalez-vous !
