Miam, sweet potatoes fries are my daughter's favorite meal at the school's restaurant. So obviously, I had to replicate them at home and in my version put a bit of turmeric and rosemary which goes so well together. For a vegan recipe, use coconut oil instead and omit the egg...

OVEN SWEET POTATOES FRIES WITH TURMERIC AND ROSEMARY
A quick glance in your kitchen…

In your fridge
Egg 
Sweet potatoes
Fresh rosemary

In your cupboard 
Turmeric
Olive oil


OVEN SWEET POTATOES FRIES WITH TURMERIC AND ROSEMARY 
Serves 3-4



1kg 35,27 oz of peeled sweet potatoes cut into small sticks like fries.
3 tbsp of olive oil
1 tbsp of turmeric
1 egg white
Fresh rosemary

Preheat your oven to 200° C.
In a large bowl, mix the egg white with the turmeric and the olive oil.
Pour the fries in the bowl and combine well.
Put them on a baking paper. They should not overlap otherwise they will not cook evenly.
Pop in the oven for 30 minutes returning them once.
Once cooked, drizzle with rosemary and enjoy!




Frites de patates douces au four curcuma et romarin


Pour 3-4 personnes
1 kg de patates douces épluchées et coupées en bâtonnets (frites)
3 CAS d’huile d’olives
1 blanc d’œuf
1 CAS de curcuma
Romarin frais

Préchauffez votre four à 200° C.
Dans un grand récipient, fouettez le blanc d’œuf avec l’huile et le curcuma.
Ajoutez les frites et bien amalgamer le tout.
Les déposer sur une plaque recouverte de papier sulfurisé en faisant attention à ce que les frites ne se chevauchent pas.
Enfournez pour 30 minutes en les retournant à mi-cuisson.
Une fois cuites, assaisonnez-les de romarin et régalez-vous !
