SWEET POTATOES, COCONUT, TURMERIC AND GINGER POTAGE
(Potage de patates douces, noix de coco, gingembre et curcuma)

The kind of potage we are all looking for after a long christmas holiday where we ate a little bit too much! The velvety texture of the coconut is terribly yummy after being awaken by the ginger little kick. This potage will soon become a classic at your table!


Wine pairing : Côtes du Lot (White) from the South West.





SWEET POTATOES, COCONUT, TURMERIC AND GINGER POTAGE
A quick glance in your kitchen…

In your fridge
Carrots
Sweet potatoes
Fresh ginger
Fresh turmeric 

In your cupboard
Shallot
Garlic
Coconut milk
Vegetable cube 
Olive oil


SWEET POTATOES, COCONUT, TURMERIC AND GINGER POTAGE 
Serves 6

4 medium carrots roughly chopped
4 little sweet potatoes roughly chopped
1 banana shallot finely chopped
1 crushed garlic clove
3cm of grated fresh ginger
3cm of grated fresh turmeric
400ml 14,07 oz of coconut milk
1 vegetable stock 
1 litre of boiling water
Olive oil for the saucepan

In a large saucepan, soften the shallots with the garlic in a little bit of olive oil for 2 minutes.
Add all the others ingredients, stock and water.
Cover and cook for 30 minutes.
At the end of the cooking, blitz with a hand blender the mixture to create a potage.
It’s ready!



Potage de patates douces, noix de coco, gingembre et curcuma

Pour 6 personnes
4 carottes de taille moyenne coupées en morceaux
4 petites patates douces coupées en morceaux
1 belle échalote émincée
1 gousse d’ail écrasée
3cm de curcuma frais râpé
3cm de gingembre frais râpé
400ml de lait de coco
1 litre d’eau bouillante
1 bouillon style Kub 
Huile d'olive

Dans une large casserole, faites revenir les échalotes et l’ail dans un petit peu d’huile d’olive pendant 2 minutes.
Ajoutez les autres ingrédients listés ainsi que le bouillon et l’eau.
Couvrez et cuisez 30 minutes.
A la fin de la cuisson, réduire les légumes en potage à l’aide d’un mixeur plongeant.
C'est prêt !
