I continue with my vegan recipes and especially the velvety texture of coconut milk in soup! What a bliss in your mouth it is... I adore raw beetroots and this potage is an absolute delight. Beware though as it is a little bit messy (think crime scene so protect yourself and everything around..). I did not put anything else in the soup to really taste the woody notes of the beetroots and I succeeded quite well actually...


Wine pairing : Tursan (White) from the South West.






RAW BEETROOT AND COCONUT POTAGE 
A quick glance in your kitchen…

In your fridge
Raw beetroots
Potatoes

In your cupboard
Shallot
Garlic
Olive oil
Vegetable stock

RAW BEETROOT AND COCONUT POTAGE 
Serves 6



400gr of raw beetroots cut in half
350gr of potatoes cut in half
1 banana shallot finely chopped
1 crushed garlic clove
400ml 14,07 oz of coconut milk
1 vegetable stock 
1 litre of boiling water
Olive oil for the saucepan

In a large saucepan, soften the shallots with the garlic in a little bit of olive oil for 2 minutes.
Add all the others ingredients, stock and water.
Cover and cook for 30 minutes.
At the end of the cooking, blitz with a hand blender the mixture to create a potage.
It’s ready!



Potage de betteraves crues et noix de coco


Pour 6 personnes
400gr de betteraves crues coupées en deux
400g de pommes de terre coupées en deux
1 belle échalote émincée
1 gousse d’ail écrasée
400ml de lait de coco
1 litre d’eau bouillante
1 bouillon végétal 
Huile d'olive

Dans une large casserole, faites revenir l' échalotes et l’ail dans un petit peu d’huile d’olive pendant 2 minutes.
Ajoutez les autres ingrédients listés ainsi que le bouillon et l’eau.
Couvrez et cuisez 30 minutes.
A la fin de la cuisson, réduire les légumes en potage à l’aide d’un mixeur plongeant.
C'est prêt !
