EDAMAME GUACAMOLE WITH SALMON OPEN SANDWICH 
(Tartine de guacamole d'edamame et saumon)


I have discovered this young soybeans in New-York actually at a friend's house. It was serve on its on with a bit of salt and we had to open the pod to eat it. I looked for edamame beans when back in London. Lucky me, they were nearly everywhere. Since then, I try to find a different way to enjoy them and following my Okinawa diet, the edamame guacamole was my answer... Paired with rye bread and a lovely slice of salmon, it is a savory snack made in no time... 






EDAMAME GUACAMOLE WITH SALMON OPEN SANDWICH 
A quick glance in your kitchen…



In your fridge
Edamame beans
Lemon
Tomato
Fresh coriander
Smoked salmon

In your cupboard
Rye bread
Shallot




EDAMAME GUACAMOLE WITH SALMON OPEN SANDWICH 
Serves 1




200g 7,0 oz of cooked edamame beans

1 shallot

1 tomato

A few leaves of fresh coriander

Half a lemon juice

2 slices of rye bread

2 slices of smoked salmon

Blitz to purée the beans with the shallots, tomato, coriander and lemon juice.
Spread this paste on the rye bread.
Add on top the salmon and serve! 



Tartine de guacamole d’edamame et saumon

Pour 1 personne
200g d’haricots edamame cuits

1 échalote

1 tomate

Quelques feuilles de coriandre

Le jus d’1/2 citron

2 tranches de pain noir

2 tranches de saumon fumé

A l’aide d’un robot, réduire en purée les haricots, échalote, tomate, coriandre et citron.
Etalez cette pate sur les 2 tranches de pain.
Rajoutez par-dessus le saumon et dégustez !
