GREENGAGES WITH MINT AND THYME SOUP
(Soupe de Reine-Claude, menthe et thym)

I think that this year, I have done the most of the greengages season as they were so yummy! I did this soup in France with my friends when the sun gently changed as we were ending the lovely month of August... Do not hesitate to change the fruits if you cannot find greengages. It works perfectly well with red or yellow plums actually!

In your fridge
Greengages
Fresh mint leaves
Thyme sprigs

In your cupboard 
Brown caster sugar

GREENGAGES WITH MINT AND THYME SOUP
Serves 4



1kg 35,27 oz of greengages cut in half

120g 4,2 oz of brown caster sugar

30cl 1,5 oz of water

5 thyme sprigs

1 generous handful of fresh mint leaves

In a pan, dissolve the sugar in the water.
Add the mint and leave it to simmer for 20 minutes.
Leave it to cool down and place the greengages and the thyme. Set aside.
Best serve cool.






Salade de Reine-Claude, menthe et thym

Pour 4 personnes
1kg de Reines-Claudes coupées en deux
120g de sucre roux en poudre
30cl d’eau
5 brins de thym frais
1 généreuse poignée de feuille de menthe fraiche ciselée

Faites chauffer dans une casserole l’eau avec le sucre jusqu’à dissolution.
Ajoutez la menthe et laissez frémir 20 minutes.
Apres refroidissement, disposez les Reines-Claudes et le thym. Réservez.
Servir bien frais.
