SOLE WITH LEMON AND BASIL IN PAPILLOTE
(Papillotes de soles citron, basilic)

I prepare papillotes nearly every day, with fish or with vegetables. It's easy, quick and healthy. In addition, you can put whatever you fancy, the choice is yours! I have done this Dover sole with lemon and basil because it was in my fridge, it is not more complicated than that! It was terribly yummy, your turn ?



Wine pairing : Charlemagne (White) from Burgundy.









SOLE WITH LEMON AND BASIL IN PAPILLOTE 
A quick glance in your kitchen…

In your fridge
Dover or lemon sole fillets
Fresh basil leaves
Lemon

In your cupboard 
Olive oil
Shallots
Baking paper

SOLE WITH LEMON AND BASIL IN PAPILLOTE
Serves 2




2 sole fillets
1 generous handful of fresh basil leaves finely chopped
1 lemon zests
Olive oil
2 shallots
2 squares of baking paper

Preheat your oven at 200° C.
Soften the shallots in a pan for 3minutes.
Meanwhile, place the fillet in one square.
Add the basil, lemon zest, a few tbsp. of shallots and drizzle with olive oil.
Close the papillote.
Repeat for the second square.
Bake for 15-20 minutes.
Serve with a green salad.


Papillotes de soles citron, basilic

Pour 2 personnes
2 jolis filets de sole
Une généreuse poignée de feuille de basilic frais émincé
Les zestes d’un citron
Huile d’olive
2 échalotes
2 carrés de papier sulfurisé

Préchauffez votre four à 200° C.
Attendrir les échalotes dans une poêle pendant quelques minutes.
Pendant ce temps, disposez le filet dans un carré.
Ajoutez-y les zestes et basilic, quelques cuillerées d’échalote puis un filet d’huile d’olive.
Refermez la papillote.
Répétez la procédure pour le second carré.
Enfournez pour 15-20 minutes.
Dégustez avec une salade verte.
