(Salade de fenouil aux radis et graines de courge)


I have eaten this salad with one of my good friend in London before she moved to Geneva. She had invited us around a gargantuesque brunch and the salad was just in front of me. I tasted it with the yummy scrambled eggs prepared by her husband and it was what I call a "perfect" salad : light, fresh, healthy and tasty. I obviously asked for the recipe and reproduced it. Since then, I make this gorgeous dish in a regular basis... Enjoy!

FENNEL, RADISHES AND PUMPKIN SALAD 
A quick glance in your kitchen…

In your fridge
Fennel bulb
Radishes
Lemon

In your cupboard 
Pumpkin seeds
Mustard
Olive oil
Honey

FENNEL, RADISHES AND PUMPKIN SALAD 
Serves 4



1 fennel bulb finely sliced
A dozen of radishes sliced
50g of pumpkin seeds 
6 tbsp of olive oil

The juice of 1 lemon

2 tbsp of honey

1 tbsp of mustard


In a large bowl, prepare the dressing with all the ingredients listed below.
Add the vegetables and the pumpkin seeds.
Mix thoroughly and serve!



Salade de fenouil aux radis et graines de courge



Pour 4 personnes 
1 bulbe de fenouil émincé 
1 dizaine de radis émincés
50g de graines de courge 
6 c. à soupe d’huile d'olive

Le jus d’1 citron

2 c. à soupe de miel

1 c. à soupe de moutarde


Préparez dans un saladier la vinaigrette avec les ingrédients listés ci-dessus.
Ajoutez les légumes et les graines de courge.
Bien mélanger le tout et servir !
