Even before moving to London, I absolutely adored sweet and sour dishes. Mind you, it was not the same for everyone and when I cooked some, my guests usually left their plates half eaten :(. Nowadays, our palate definitely changed and when I proposed sweet and sour recipes, the plates is definitely empty for my great pleasure. The banana and coconut filet mignon is loved by all and I hope by you as well!

BANANA AND COCONUT MILK PORK FILET MIGNON

In your fridge
Pork filet mignon 
Bananas
Ginger
Butter

In your cupboard
Onions
Garlic
Madras curry
Coconut milk
Basmati rice
Olive oil


BANANA AND COCONUT PORK FILET MIGNON
Serves 4




800g 28,21 oz of pork filet mignon sliced
2 onions finely chopped
1 crushed garlic clove
4 bananas sliced
1 tbsp of Madras curry
60g 2,11 oz of fresh ginger
400g 14,10 oz of coconut milk
350g 12,34 oz of basmati rice
50g 1,7 oz of butter
Olive oil for the pan

In a pan, soften the filet with onions and garlic in a little bit of olive oil for 5 minutes.
Add the coconut, ginger and curry and stir well.
Cover and simmer for 30 minutes.
Meanwhile, cook the rice.
5 minutes before serving, cook the banana slices in a little pan with the butter.
Serve the filet with the rice and the bananas.


Filet mignon bananes et coco


Pour 4 personnes
800g de filet mignon coupé en tranches
2 oignons émincés
1 gousse d’ail écrasée
4 bananes tranchées
1 cas de curry Madras
60g de gingembre frais râpé
400g de lait de coco
350g de riz basmati
Huile d’olive pour la poêle
50g de beurre

Faites revenir dans une poêle, les oignons, ail et filet dans un filet d’huile d’olive pendant 5 minutes.
Versez le lait, le gingembre et le curry et bien mélanger le tout.
Couvrir et laissez mijoter sur feu doux pendant 30 minutes.
Pendant ce temps, cuire le riz.
5 minutes avant la fin de la cuisson, faites revenir les bananes avec le beurre dans une petite poêle.
Servez le filet avec le riz et les bananes.
