(Salade de salicorne, choucroute et riz rouge)

I was very happy to find samphires while doing my food shopping the other day! But with the freezing weather we have in London right now, I was not really looking to cook them in a salad actually! Anyway, a lovely fresh sauerkraut display chased my thoughts : I will make a samphires salad with sauerkraut. An absolute yummy one to face the cold! If you prefer, you may cook the samphires 5 minutes only in boiling water...;) The ingredients present are from the Okinawa diet.




Wine pairing : Petit Chablis (White) from Burgundy.







SAMPHIRE, SAUERKRAUT AND RED RICE SALAD 
A quick glance in your kitchen…

In your fridge
Sauerkraut
Samphires 
Avocado
Fresh turmeric (if possible)

In your cupboard
Red rice
Garlic
Honey
Mustard 
Olive oil

SAMPHIRE, SAUERKRAUT AND RED RICE SALAD
Serves 1


70g of washed red rice
70g of fresh sauerkraut
40g of washed fresh samphires
1 avocado cubed
1 cm of fresh turmeric finely chopped
1 garlic clove finely chopped
1 tbsp of honey
1 tbsp of mustard
3 tbsp of finest olive oil


Bring to the boil water for the red rice. Cook it for 25 minutes.
Meanwhile, prepare the dressing in a bowl, combining the olive oil with the honey and mustard.
Once cooked, prepare a plate with the sauerkraut, samphires and avocado.
Add the rice and the dressing. Toss well and sprinkle with the turmeric.



Salade de salicorne, choucroute et riz rouge


Pour 1 personne
70g de riz rouge nettoyé
70g de choucroute fraiche
40g de salicornes
1 avocat coupé en morceaux
1cm de curcuma frais (en poudre sinon, 1 CAC)
1 gousse d’ail hachée
1 CAS  de miel
1 CAS de moutarde
3 CAS de très bonne huile d’olive

Cuire le riz 25 minutes dans de l’eau bouillante.
Pendant ce temps, préparez la vinaigrette en combinant l’huile d’olive avec la moutarde et le miel.
Une fois cuit, disposez sur une assiette la choucroute avec les salicornes et l’avocat.
Ajoutez le riz et la vinaigrette et bien mélanger le tout. Saupoudrez de curcuma.
