CRAB, MANGO AND POMEGRANATE SALAD
(Salade de crabe, mangue et grenade)

This fresh salad is an absolute gem! As you know, I absolutely adore fresh crab meat. So much, that I cannot cook it, it ruins the subtle flavor it has. Paired with fruits and vegetable, it is delicious. So delicious that it needs only a dash of very fine olive oil for seasoning!


Wine pairing : Entre-deux-mers (White) from Bordeaux.

A quick glance in your kitchen…

In your fridge
Fresh pomegranate 
Lamb lettuce
Fresh crab meat
Mango
Lime

In your cupboard 
Shallot
Olive oil




CRAB, MANGO AND POMEGRANATE SALAD
Serves 3



Half a pomegranate (keep 3 tbsp of the juice) 
130g 4,58 oz of lamb lettuce 
200g 7,05 oz of fresh crab meat 
1 shallot diced
1 mango diced
4 tbsp of fine olive oil 
The juice of 1 little lime 

Mix delicately the crab meat with the mango, shallot, lettuce and the pomegranate.
In a bowl, combine olive oil together with lime and pomegranate juice.
Drizzle over the salad. Best served chilled.


Salade de crabe, mangue et grenade



Pour 3 personnes
1 demi-grenade (gardez 3 CAS de jus)
130g de mâche
200g de chair de crabe fraiche
1 échalote finement coupée
1 mangue coupée en morceaux
4 CAS de très bonne huile d’olive
Le jus d’1 citron vert

Dans un saladier, mélangez délicatement le crabe avec la mangue, la mâche, l’échalote et les grains de grenade.
Dans un bol, mixez l’huile avec le jus de grenade et le citron vert.
Repartir cette sauce sur la salade et servir bien frais !
