SOBA WITH MISO CHICKEN AND EDAMAME
(Soba aux haricots edamame et poulet-miso)


I do love Soba. Those special brown pasta made with buckwheat. They cook in 4 minutes only which is absolutely perfect. In addition, they taste heavenly. We can easily find edamame beans now (as well as Soba pasta) in large supermarkets. Before, when they were not so popular, I cannot count how many times I had to go to Japan Center in Piccadilly to find those special ingredients...

In your fridge
Edamame beans
Chicken breast

In your cupboard
Soba pasta
Brown onion
Sesame oil
Olive oil
Miso paste
Fresh ginger
Cashew nuts


SOBA WITH MISO CHICKEN AND EDAMAME
Serves 1


85g 2,99 oz of soba pasta 
70g 2,46 oz of edamame beans
1 little brown onion finely sliced
1 tbsp of sesame oil
1 tbsp of olive oil
1 chicken breast cut into small chunks
1 tbsp of miso paste
1 cm of fresh grated ginger
A few cashew nuts

Spread the miso paste all over the chicken chunks.
In a pan, soften the onion with the olive oil and sesame oil.
Add the chicken, the ginger and cook for 10 minutes, stirring from time to time.
Meanwhile, bring water to the boil for the soba. Cook them 4 minutes, drain and set aside.
Then, bring water to the boil for the edamame. Cook them 5 minutes, drain and set aside too.
Arrange your plate with the soba, edamame, onion and chicken.
Combine well and drizzle with cashew nuts and sesame oil if you wish.



Soba aux haricots edamame et poulet-miso

Pour 1 personne
85g de pâtes Soba
70g d’haricots Edamame
1 petit oignon finement émincé
1 CAS d’huile de sésame
1 CAS d’huile d’olive
1 tranche de blanc de poulet coupé en morceaux
1 CAS de pâte miso
1cm de gingembre frais râpé 
Quelques noix de cajou

Repartir la pâte miso sur les morceaux de poulet. Réservez.
Dans une poêle, faites suer l’oignon dans l’huile d’olive et de sésame.
Ajoutez le poulet avec le gingembre et cuire une dizaine de minutes en remuant de temps en temps.
Pendant ce temps, cuire les pâtes Soba dans de l’eau bouillante pendant 4 minutes. Egouttez puis réservez.
Ensuite, cuire les haricots dans de l’eau bouillante pendant 5 minutes. Egouttez puis réservez également.
Dressez votre assiette avec les Soba, Edamame, onion, noix de cajou et poulet.
Mélangez bien le tout et arrosez d’un filet d’huile de sésame si vous le souhaitez.
