POTAGE WITH BUTTERNUT, BROCCOLI AND BRUSSELS SPROUTS
(Potage aux butternut, broccoli et choux de Bruxelles)

Very easy and full of vitamins this potage has everything to please you! As the butternut is a pain in the Atmosphere to cut, I always go for the frozen version which is already peeled and diced! The same for the vegetables : I find pouches with a nice mix already cut. In France, we use a lot of frozen vegetables thanks to the Mr Picard shops all over the country. So do not hesitate to use some now!




Wine pairing : Muscadet (White) from the Loire Valley.

A quick glance in your kitchen…

In your freezer
Vegetables mix (Broccoli, carrots and Brussels sprouts for me)
Butternut squash

In your cupboard
Shallots
Garlic
Vegetable stock

POTAGE WITH BUTTERNUT, BROCCOLI AND BRUSSELS SPROUTS
 Serves 6

500g 17,63 oz of broccoli, brussels sprouts and carrots roughly chopped
500g 17,63 oz of butternut (cubed and frozen for me)
2 shallots finely chopped
1 garlic clove (crushed) 
1 vegetable stock 
1,5 l of boiling water

In a large saucepan, fry the shallots with the garlic in a little bit of olive oil for 2 minutes.
Add the vegetables,stock, and water.
Cover and cook for 20 minutes.
At the end of the cooking, blitz with a hand blender the mixture to create a potage.
It’s ready!




Potage aux butternut, broccoli et choux de Bruxelles

Pour 6 personnes 
500g d’un mélange de carottes, broccoli et choux de Bruxelles
500g de butternut (surgelé et deja coupé pour moi)
2 échalotes finement émincées
1 gousse d’ail écrasé
1 bouillon végétal
1,5 litre d’eau bouillante

Dans une large casserole, faites revenir les échalotes et l’ail dans un petit peu d’huile d’olive pendant 2 minutes.
Ajoutez le mélange de légumes, butternut, bouillon et eau.
Couvrez et cuire 20 minutes.
A la fin de la cuisson, réduire les légumes en potage à l’aide d’un mixeur plongeant.
Votre soupe est prête !
