This sandwich is a definition of Autumn in itself. I did a soup with the same ingredients and it was so yummy that I wanted to have a "bite" in it if you know what I mean. I tried in salad but it was not the same as the dressing transformed the taste completely. So I came with a sandwich and it was really good. As I realized this sandwich in France, I did have some amazing cooked chestnuts so I advise you to look for some in jars and not in a pack... In addition, I have taken artichoke hearts in tin as it is quicker and easier but do not hesitate to use fresh ones if you have the time...

Wine pairing : Marsannay (Rosé) from Burgundy.

A quick glance in your kitchen...

In your fridge
Rocket salad

In your cupboard
Cooked chestnuts
Artichoke hearts in tin
Hazelnut oil

Serves 1

6 cooked chestnuts
1artichoke hearts in tin
A drizzle of hazelnut oil
The juice of half a lemon
Rocket salad (optional)
2 wholemeal slices of bread

Using a food processor, blend the chestnuts with the artichoke, hazelnut oil and lemon.
Spread the mixture on the slices, add the salad if you wish.
Close with the second slice and enjoy!

Sandwich châtaigne et artichaut

Pour 1 personne 
6 châtaignes déjà cuites
1 cœur d’artichaut frais ou en boite
Un filet d’huile de noisettes
Le jus d’1/2 citron
Salade roquette (optionnel)
2 tranches de pain de mie complet

A l’aide de votre robot, mixez les châtaignes avec l’artichaut, l’huile et le citron.
Etalez cette mixture sur les 2 tranches de pain.
Ajoutez quelques feuilles de roquette si vous le souhaitez.
Refermez avec la deuxième tranche de pain.
