TAPENADE, CHICKEN AND GOAT CHEESE SANDWICH
(Sandwich poulet, tapenade et chèvre )


You know by now how much I love the tapenade... So much that sometimes, I have 2 jars waiting to be finished! As usual, I was not keen on discard it so I have created this sandwich, sandwich I should have named leftover actually as I added a piece of chicken and goat cheese which were as well feeling lonely in my fridge...



Wine pairing : Picpoul de Pinet (White) from Languedoc-Roussillon.





TAPENADE, CHICKEN AND GOAT CHEESE SANDWICH
A quick glance in your kitchen...

In your fridge
Capers
Chicken
Goat cheese

In your cupboard
Dry tomatoes
Granary bread
Black olives
Anchovies (from a tin)
Olive oil

TAPENADE, CHICKEN AND GOAT CHEESE SANDWICH
Serves 1

For the tapenade
200g 7,05 oz of pitted black olives 
2 garlic cloves 
2 anchovies
3 tbsp of capers
2 tbsp of olive oil 

Blitz the olives with the garlic, anchovies,capers and olive oil until smooth.

A piece of cooked chicken breast cubed
1 slice of goat cheese
Some dry tomatoes
2 Granary sliced bread
Tapenade

Spread the tapenade on the bread (both).
Add the chicken breast, goat cheese and dry tomatoes.
Close with the second slice of bread.
Enjoy!


Sandwich poulet, tapenade et chèvre


Pour 1 personne
Tapenade maison 
200g d’olives noires dénoyautées
2 gousses d’ail
2 anchois
3 CS de câpres
2 CS d’huile d’olive

A l’aide de votre mixeur plongeant, réduire en purée les ingrédients listés.

Un morceau de blanc de poulet découpé en morceaux
1 tranche de fromage de chèvre
Des tomates sèches
2 tranches de pain de mie aux céréales
Tapenade

Etalez la tapenade sur les 2 tranches de pain.
Ajoutez le poulet, fromage et tomates.
Refermez avec la seconde tranche de pain.
Enjoy !
