COMPOSED PINEAPPLE AND RICE SALAD 
(Salade composée riz et ananas)

In France, we tend to like cold rice salad especially with tuna OR pineapple, it makes a lovely dish very rapidly. I do think that this kind of sweet and sour salad is really inviting don't you think so? It is very well balanced and full of flavors. I do like to do it for my French buffet with a chutney I brought back from London... Very easy it is ALWAYS the dish which is finished first. Do not ask me why...;) Do not hesitate to add anything you fancy or some leftover, perfect and yummy for a lazy dinner!


Wine pairing : Saint Chinian (White) from Languedoc-Roussillon.




COMPOSED PINEAPPLE AND RICE SALAD 
A quick glance in your kitchen...

In your fridge
Pineapple
Limes
Ginger
Red pepper
Green pepper 
Chili
Coriander 

In your cupboard
Basmati rice
Chickpeas
Cashew nuts
Olive oil
Mango chutney


COMPOSED PINEAPPLE AND RICE SALAD 
Serves 6


1 juicy pineapple (peeled and cubed)
250g 8,81 oz of Basmati rice
The juice of 2-3 limes
2cm of fresh grated ginger
1 red pepper chopped
1 green pepper chopped
250g 8,81 oz of chickpeas in can
70g 2,46 oz of cashew nuts
10g 0,35 oz of fresh coriander finely chopped 
1 chili finely chopped 
6 tbsp of olive oil
2 tbsp of mango chutney

Bring water to the boil and cook the rice for 10 minutes.
Meanwhile, in a large bowl, prepare the dressing with the lime juice, chutney, chili and the olive oil.
Add all the other ingredients listed above and finish with the rice.
Combine well. Set aside in the fridge.



Salade composée riz et ananas

Pour 6 personnes


1 ananas coupé en morceaux
250g de riz Basmati
Le jus de 2-3 citrons verts
2cm de gingembre frais râpé
1 poivron rouge coupé en morceaux
1 poivron vert coupé en morceaux
250g de pois chiches en conserve
70g de noix de cajou
10g de coriandre effeuillée
1 piment émincé
6 CS d’huile d’olive
2 CS de chutney de mangue

Cuire le riz  pendant 10 minutes.
Pendant ce temps, préparez la vinaigrette dans un saladier avec l’huile d’olive, le chutney, le piment et le jus des citrons.
Ajoutez tous les ingrédients listés puis le riz cuit.
Mélangez bien et servir frais.

  1. Du gingembre, de la coriandre, du citron vert, des pois chiches (Hmm), de l'ananas (bien sûr), non mais où ai-je mis ma fourchette ? ^^
