(Salade de papaye, Brie, riz de chou-fleur cru et raisins)

 
I used to eat only Raw. I used to follow "the eating way of life" of Matthew Kenney and Sarma Melngailis. It was not a quick kind of cooking, oh no. It was not subsonic cooking either. It was a long way to the top to be able to eat something. Nights to soak the nuts, half a day in the dehydrator (Excalibur) and so on. The day I could have killed for a steak I knew that something was wrong. I gave up and listened to my body. A steak, ok, a steak. A juicy avocado as a snack, ok, a juicy avocado then. And so on. And now I am happy. Happy to eat raw sometimes. Happy to eat meat as well. This salad is exquisite. The dry apricots with the papaya are a very good match. The raw cauliflower and the grapes, a perfect combination. And the Brie of course for the French touch!


Wine pairing : Bollenberg Gewurztraminer (White) from Alsace.

A quick glance in your kitchen...

In your fridge
Lettuce 
Black grapes
Papaya
Brie cheese
Raw cauliflower

In your cupboard
Dry apricots
Black sesame

PAPAYA, CAULIFLOWER RICE, GRAPE AND BRIE SALAD
Serves 1

A generous handful of lettuce
3 dry apricots (diced)
A dozen of black grapes
Half a papaya diced
A little bit of black sesame
A slice of Brie cheese
1 generous handful of raw cauliflower rice

On a bed of lettuce, dispose all the ingredients listed together.
Season with your own dressing.
Toss and serve!

Salade de papaye, Brie, riz de chou-fleur cru et raisins

Pour 1 personne


Quelques feuilles de laitue
3 abricots secs coupés en dés
Une douzaine de grain de raisins
La moitie d’une papaye coupée en morceaux
Un petit peu de grain de sésame noir
Une tranche de Brie
Une généreuse poignée de riz de chou-fleur cru

Sur le lit de laitue, disposez tous les ingrédients listés.
Ajoutez votre vinaigrette.
Bien mélanger et servir !
