GREEN PUY LENTILS, GIANT COUSCOUS AND SWEET POTATOES POTAGE

 
Ah la la, it's cold and grey outside so it's soup time ! Soups are so effortless to make and yummy to eat. Combination are endless : mushrooms, almonds, cauliflower, coconut, curry, etc... Let your imagination do the job and just blend! I have chosen a very easy one today : lentils, sweet potatoes and giant couscous. The pearl-like giant couscous in a soup is a very lovely touch and it goes well with anything... I have called this soup "Potage" because it's quite a thick one so...  
The Green Puy Lentil occurred on a well-defined area, located in the heart of the Haute-Loire on the high plateaus of Velay in France (alt: 600-1200 m).
Several ancient texts and recent archaeological discoveries trace the presence of green lentils in Le Puy-en-Velay region to more than 2000 years!!! Nicknamed the "caviar of the poor", the Puy Lentil Green differs from its colleagues by its fine taste, delicately sweet, its beautiful green color and its thinner skin allowing fast cooking. In your fridge
Sweet potatoes
Carrots

In your cupboard
Herb infusion stock pot
Garlic
Giant couscous
Lentille Verte du Puy (or any lentils)

GREEN PUY LENTILS, GIANT COUSCOUS AND SWEET POTATOES POTAGE
Serves 4-6

1,5l of boiling water 
2 herb infusion stock pot 
100g 3,5 oz of onions (frozen for me) 
2 crushed garlic cloves 
70g 2,5 oz of lentilles vertes du Puy (Puy green lentils) 
700g 24,69 oz of sweet potatoes (peeled and diced) 
300g 10,5 oz of carrots (diced) 
70g 2,5 oz of giant couscous.

In a large pan, fry the onions and garlic in a little bit of olive oil for 1 minute.
Add carrots, potatoes, lentils, boiling water and stock pot.
Cover and cook for 20 minutes.
At the end of the cooking, blitz with a hand blender the mixture to create a potage.
Add the giant couscous.
Wait for a further 5 minutes.
It’s ready! 



Potage de lentilles vertes du Puy, patates douces et couscous géant

Pour 4-6 personnes

1,5 L d’eau bouillante
1 bouillon cube végétal
100g d’oignons émincé
2 gousses d’ail écrasées
70g de lentilles vertes du Puy
700g de patates douces coupées en morceaux
300g de carottes coupées en morceaux
70g de couscous géant

Dans une grande casserole, faites revenir ail et oignons dans un petit peu d’huile d’olive.
Ajoutez les carottes, lentilles, patates, bouillon cube et eau bouillante.
Couvrir et cuire 25 minutes.
A la fin de la cuisson, réduire en soupe la mixture à l’aide d’un mixeur plongeant.
Ajoutez le couscous.
Attendez 5 minutes que le couscous prenne.
Régalez-vous !
