AUBERGINE AND HONEY TARTE

Aubergine is such a versatile vegetable. We tend to associate it with Ratatouille but we can do so many yummy dishes with.  In summertime, it is lovely as a "caviar d'aubergine" or Baba ganoush (recipe here). Perfect when stuffed for an "aubergine farcie" (a mixture of vegetables with meat, stuffed in half an aubergine and cook in the oven for 20 minutes). Lovely in a flan or clafoutis, wonderful roasted and mix with a spring salad and my favorite way of cooking aubergine (apart from the caviar) is in a tarte (a pie). I ate this lovely one at a friend's table and it was very, very good indeed... I just added some honey. You know me, I have to change the recipe a little bit to propose it my way...

AUBERGINE AND HONEY TARTE
A quick glance in your kitchen...

In your fridge
Crème fraîche
Aubergines
Puff pastry
Egg

In your cupboard
Garlic
Onions
Honey

AUBERGINE AND HONEY TARTE
Serves 4-6

2 little aubergines (diced) 
150g 5 oz of onions (frozen for me) 
1 crushed garlic clove 
1 puff pastry 
2 tbsp of mustard 
1 egg 
20cl 6,75 oz of crème fraiche 
4 tbsp of honey.

In a pan, fry the aubergines, garlic and onions in a little bit of olive oil.
Add the honey and cook for 10 mn.
Pre-heat your oven to 180°.
In a little bowl, whisk the egg with the crème fraiche.
Butter and line a pie tin and place in the puff pastry.
Spread the mustard over the pastry.
Pour in the aubergines then add the cream mixture.
Cook for 30-40 minutes.



Tarte aubergine et miel 

Pour 4-6 personnes
2 petites aubergines coupées en morceaux
150g d’oignons
1 gousse d’ail écrasée
1 pâte feuilletée
2 c-à-soupe de moutarde
1 œuf
20cl de crème fraiche
4 c-à-soupe de miel



Dans une poêle, faites revenir les aubergines avec l’oignon, le miel et l’ail pendant 10 minutes.
Préchauffez votre four à 180°.
Dans un petit bol, battre l’œuf avec la crème. 
Chemiser un moule à tarte et placez-y la pâte feuilletée.
Tartiner la pâte de moutarde. 
Déposez la préparation d’aubergines puis la mixture de crème sur la pâte.
Enfournez pour 30-40 minutes.
