 MEDIEVAL HYPOCRAS


The legend says that the invention of Hypocras comes from the Greek physician Hippocrates (fifth century BC). The first recipe of Hypocras was written in English by Edward Lord Stafford, chef of King Richard II and presented to Queen ELIZABETH in 1390. The drink was very popular throughout the Middle Ages, often prescribed by doctors to digest…I simply adore this beverage. It emanates from it a lovely and nice christmassy vibration. You can gently reheat it if you wish but it is traditionally enjoyed chilled ! Drink aware of course!!!




MEDIEVAL HYPOCRAS
A quick glance in your kitchen...


In your cupboard
Red wine
Fresh ginger
Star anise
Cardamom pods
Cinnamon sticks
Honey
Juniper berries
Cloves
Rose water
Vanilla pod
Black pepper
Nutmeg

MEDIEVAL HYPOCRAS
Serves 6

1l of red wine (Malbec for me)
20g 3/4 oz of fresh ginger 
2 star anise 
4 cardamom pods 
4 cinnamon sticks 
120g 4 oz of honey 
2 juniper berries 
2 cloves 
2 tbsp of rose water 
1 vanilla pod 
A dash of : black pepper and nutmeg

Combine well the honey to the wine.
Grind the spices in a mortar. Slice the ginger.
Pour the wine preparation into a big jug with all the spices and rose water.
Set aside in the fridge for a minimum of 4 hours.
Mix well with a wooden spoon.
Strain through a coffee filter and serve. 


Vin médiéval Hypocras

Pour 6 personnes
1 litre de vin (Malbec pour moi)
20g de gingembre frais râpé
2 anis badiane
4 graines de cardamome
4 bâtons de cannelle
120g de miel

2 clous de girofle

2 c-a-soupe d’eau de rose
1 gousse de vanille
Une pincée de poivre noir
Une pincée de noix de muscade fraichement râpée

Dans une grande carafe, dissoudre le miel dans le vin
Dans un mortier (ou à l’aide de votre robot), broyer toutes les épices.
Les ajouter dans la carafe avec l’eau de rose.
Bien mélanger.
Laisser reposer au réfrigérateur pendant un minimum de 4 heures.
Filtrer avec un filtre à café.
Servir bien frais ou légèrement tiède.
