HONEY GOAT CHEESE (Crottin au miel de fleurs d'oranger)

HONEY GOAT CHEESE
(Crottin au miel de fleurs d'oranger)

My friend Helene de Troie has a goat called Lychee who lives in a farm nearby her house. She has a dozen of crottin by month from the fresher to the stronger. And the stronger believe me is..........terribly strong. It stings your tongue if you know what I mean and you need to wash it down with a nice glass of wine...
In France, we like to eat fresh goat cheese with honey and Griottes (dark cherry) jam, it gives a little oumph to the milky taste of the fresh cheese.

Wine pairing : Banyuls (sweet red) from Languedoc-Roussillon.
