SANDWICH "MIXTE" (HAM, ECHIRE BUTTER AND EMMENTAL CHEESE)

This is an absolute classic in France. You will find this "Mixte" sandwich in any bakeries or brasseries all over the country. It's simple and balanced : bread, butter, Emmental cheese and ham... The success of this sandwich is plain sailing : its ingredients. You have to use the best especially for the bread and butter believe me...
For the bread :  think Orée bakery in Fulham Road or Hedone in Chiswick (You may find some at Bayley and Sage here).
For the butter : beurre d'Echiré (AOC butter) or d'Isigny.
For the ham : buy it at the counter as we say in France (à la coupe). Ham served in packages are absolutely dreadful...
The Echiré butter is defined as the best butter worldwide (oups!). It comes from Poitou-Charente and exists since 1894. Its manufacturing process has remained completely traditional : they still use a wooden barrel churn...
Obviously at the end, you can choose whatever you fancy really...

IN YOUR FRIDGE
Finest ham
Emmental cheese 
d'Echiré or d'Isigny butter

IN YOUR CUPBOARD
Baguette

SANDWICH "MIXTE"
Serves 1 
The quarter of a piece of  baguette open in half
A little bit of butter 
A generous slice of ham
A generous slice of Emmental cheese

Buttered one side of the baguette
Layered the ham and the Emmental cheese inside.
Close the sandwich.
Enjoy !



Sandwich Mixte

Pour 1 personne
1 quart de bonne baguette (genre Fagote par exemple)
Un peu de beurre d’Echiré
Une jolie tranche de jambon à la coupe
Une généreuse tranche d’Emmental

Ouvrir la baguette en deux.
La tartiner avec le beurre et y déposer le jambon ainsi que l’Emmental.
Refermez et dégustez !
