SALMON WITH GRAPEFRUIT PAPILLOTES (Papillotes de saumon au pamplemousse)

Yummy Blues supper in no time with these genius papillotes. Believe me, it is so handy, healthy, quick and tasty : papillotes is the answer for a lots of troubles in cooking; you don't need to think about it, just put whatever you fancy in your papillote (even fruits and chocolate, hummm), and let it cook!! . I love to do my vegetables as well with a little bit of olive oil and some fresh herbs and spices, it is an absolute delight.
You will adore this combination of salmon with grapefruit. Make a side salad with fennel, spinach and sun-dry tomatoes and your dish will be served in no time!!! Enjoy! 

Wine pairing : Grenache blanc, Châteauneuf-du-Pape (White) from the Rhône Valley.

A quick glance in your kitchen...

In your fridge
Salmon fillets
Spinach salad

In your cupboard
Foil squares
A few sun-dried tomatoes
Olive oil

Serves 4

4 salmon filets
2 grapefruits
1 fennel (grated)
A few sun-dried tomatoes (chopped)
Fresh spinach salads
Dressing (here)
4 foil squares
A little bit of parsley 
Olive oil to drizzle

Preheat your oven to 200° C.
Supreme the grapefruits and cut them in cubes.
Dispose each salmon fillet in 1 foil square.
Add some grapefruit cubes and parsley on top and drizzle with a little bit of olive oil.
Close the foil in papillote.
Repeat for the 3 others.
Bake for 15 minutes.
Meanwhile, prepare your salad with the fennel, spinach and tomatoes.
Toss with your own dressing (some ideas HERE)
Serve with the papillotes.

Papillotes de saumon au pamplemousse

Pour 4 personnes
4 pavés de saumon
2 pamplemousses
1 fenouil (râpé)
4 tomates cœur de bœuf (coupées en morceaux)
Huile d’olive
Vinaigrette (choix ICI)
Epinards frais
4 feuilles d’aluminium

Préchauffez votre four à  200° C.
Coupez les pamplemousses en suprême puis en dés.
Déposez les pavés de saumon dans les feuilles d’aluminium avec le pamplemousse et un peu de persil.
Arrosez d’huile d’olive.
Fermez les papillotes.
Enfournez pour 15 minutes.
Pendant ce temps, préparez la salade d’accompagnement avec les épinards frais, le fenouil ainsi que les tomates.
Ajoutez votre propre vinaigrette et mélangez bien. (vinaigrettes ICI)
Servir avec les papillotes.
