COLD BLOODY MARY SOUP WITH STILTON ICE-CUBES
 (Soupe bloody Mary et glaçons de Stilton)

Weather is so gorgeous right now in London that I have changed my schedule of meaty recipes to beat the previous cold to this lighter post : a bloody Mary soup with Stilton. It was a hit with my friends a couple of years ago when I did it many times. But it was with honey ice-cubes! Do not ask me why, so far I still have no idea ...I changed it to Stilton because I wanted it to be a little bit more British when I presented it explaining the tale the name of the cocktail has with a special Queen of England in the 16 century... As this cocktail had been invented in Paris at the famous Harry's Bar, you may replace the Stilton with Roquefort instead!!! Obviously, omit the Vodka if you don't fancy it... 

Wine pairing : Cadillac (Red) from Bordeaux.


This bloody Mary soup with Stilton ice-cubes is gluten-free.




 
COLD BLOODY MARY SOUP WITH STILTON ICE-CUBES
A quick glance in your kitchen...

In your fridge
Stilton
Single cream
Lemon
Celery

In your cupboard
Chopped tomatoes can
Worcestershire sauce
Tabasco
Vodka


COLD BLOODY MARY SOUP WITH STILTON ICE-CUBES
Serves 4

3 stalks of celery finely chopped
The zest and the juice of 1 lemon
800g of chopped tomatoes in can (with a little bit of the juice from the can)
2 tbsp of Worcestershire sauce
1 tsp of Tabasco (or Harissa)
10cl of Vodka
50g of Stilton
50g of single cream

1 hour before.
Using your microwaves, gently melt the cream with the Stilton for 2 mn at 360.
Mix it well and pour the cheese mixture in an ice cubes tray.
Place the tray in the freezer.

In a saucepan, fry the celery with the lemon zest for 5 minutes in a little bit of olive oil.
Add the chopped tomatoes with a little bit of the juice, cover and simmer for 10 minutes.
After this time, blend the tomatoes preparation and add the Tabasco, Worcestershire sauce, lemon juice and the Vodka.
Combine well.
Set aside the soup in the fridge.
Serve with 1 or 2 the Stilton ice-cubes.



Soupe froide de bloody Mary et glaçons de Stilton

Pour 4 personnes
3 branches de céleri finement coupé
Le zeste et le jus d'un citron
800g de tomates pelées en boîte (avec un peu de jus de la boîte)
2 cas de Worcestershire sauce
1 cat de Tabasco ou harissa
10 cl de Vodka 
50g de Stilton
50g de crème liquide

1 heure avant
Faites fondre au micro-ondes la crème avec le Stilton 2 minutes à 360.
Bien mélanger.
Déposer la preparation dans un bac à glaçons et faire prendre au congélateur.

Faire revenir dans une casserole, le celeri avec le zeste dans un petit peu d'huile d'olive pendant 5 minutes.
Ajouter les tomates avec un peu de jus. 
Couvrer et laisser mijoter pendant 10 minutes à feu doux. 
La cuisson terminée, réduire en purée à l'aide d'un blendeur girafe.
Ajouter alors la Vodka, le Tabasco, le Worcestershire sauce ainsi que le jus de citron.
Bien melanger le tout.
Réserver la soupe au réfrigérateur.
Servir avec 1 ou 2 glaçons de Stilton.
