If you are looking for an original, tasty, healthy and easy dip, it is right here : the Pistounade. Direct from the Provence (pistou is the Provencal name for basil). This mixture of basil, almond, green olives and garlic is the perfect dip you were looking for ages...With a fresh crusty baguette, it is absolutely awesome.

A quick glance in your kitchen...

In your fridge
Fresh basil leaves

In your cupboard
Pitted green olives
Olive oil
Ground almond

For a little jar
200g of pitted green olives 
2 garlic cloves
3 tbsp of olive oil 
A dozen of fresh basil leaves 
2 rounded tbsp of ground almonds 
The juice of a lemon

Using a hand blender, blitz smooth the olives with the garlic, olive oil, basil and lemon.
Transfer in a bowl and add manually the ground almonds. Combine well.
Set aside in the fridge.
Eat with a fresh baguette, walnut bread or raw vegetables.
