LES VINAIGRETTES 
(SALAD DRESSING)

A lot of my friends came to me about my salads : they wanted to have some ideas for their dressing. I have put the ones I use the most. Please find 9 healthy and original vinaigrettes : I hope it will be helpful for you as well... 
It was a French emigre, Chevalier d'Albingac, who started the fashion in London high society for salads dressed in this way.
The use of oil and vinegar to dress vegetables is from Ancient Rome. The term vinaigrette goes back to at least 1699 in John Evelyn's book on salads called Acetaria.



Base : serves 6 people
Combine well all the ingredients. 
Serve.


TAHINI

15cl of olive oil

4 tbsp of lime juice

1,5 tbsp of tahini

1 garlic clove (crushed)


VANILLA

15cl of olive oil

The seeds of 1 vanilla clove

3 tbsp of Xeres vinegar

1 little shallot (crushed)



HAZELNUT

15cl of hazelnut oil

3 tbsp of balsamic vinegar

1 tbsp of black sesame

1 garlic clove (crushed)



MISO

15cl of olive oil

1 tsp of Miso paste

3 tbsp of mirin (or rice vinegar)

1cm of fresh grated ginger



WALNUT

15 cl of walnut oil

4 tbsp of chives

1 little shallot (crushed)

3 tbsp of raspberry vinegar



SESAME

15cl of sesame oil
1 tbsp of mustard with grains

3 tbsp of white wine vinegar



GREEK

1 Greek yogurt

3 tbsp of Cider vinegar

1 tbsp of chives

1 tbsp of fresh mint

1 tbsp of fresh basil

1 tbsp of mustard



MAPLE

15cl of olive oil

2 tbsp of mustard

2 tbsp of Maple syrup

1 garlic clove (crushed)



HONEY

15cl of olive oil

4 tbsp of lemon juice

2 tbsp of mustard

2 tbsp of honey

1 little shallot (crushed)
