ASPERGES A LA FLAMANDE (OP VLAANSE WIJZE)

With the lovely white and gorgeous British asparagus I have seen on the market last week combine with the dreadful weather we had in London recently, I thought straight away about a very easy recipe : the famous asparagus the Flemish way. This Belgian specialty from Louvain or Malines (obviously prepares with Malines Asparagus ;), is terribly yummy. A kind of mix with a beurre blanc and a mimosa recipe. It's the perfect dish to ease your Sunday nights supper dilemma...

Wine pairing : Arbois (White) from Jura.

A quick glance in your kitchen...

In your fridge
Lemon
Butter
Hard boiled eggs
White asparagus (or green of course:0)
Parsley
Rocket salad
Tomatoes on the vine

In your cupboard
Nutmeg

ASPERGES A LA FLAMANDE - ASPARAGUS FLEMISH STYLE
Serves 2

Half a lemon juice
80g 2,82 oz of butter
3 hard boiled eggs
12 white asparagus
A few leaves of parsley
Rocket salad
4 tomatoes on the vine cut in half

Bring to the boil water for the asparagus.
Cook them for 15 minutes.
Meanwhile, in a little saucepan, gently heat the butter with the lemon and parsley.
Stop the heat.
Mash the egg with a fork and add them to the saucepan.
Cover and set aside.
Prepare the green salad with the tomatoes. Season with your own dressing. Set aside.
Place the warm asparagus on your plate and spoon over the eggs sauce.
Serve with the green salad.
