SALMON WITH MANGO SALSA TACOS

I find tacos so versatile to use. For a starter, a main or as an aperitif. You can fill them with beef, chicken, vegetables or fish like I did with mine and salmon. My children were a little bit taken aback the first time as they could not associate tacos with fish. But they enjoyed it a lot ! Especially the mango salsa, they find it so fresh that it was a real joy to see them eating...

Wine pairing : Chablis (White) from Burgundy. 




SALMON WITH MANGO SALSA TACOS
A quick glance in your kitchen...

In your fridge
Salmon fillets
Mango
Cherry tomatoes
Lime
Green salad

In your cupboard 
Taco shells
Shallot
Avocado


SALMON WITH MANGO SALSA TACOS
Serves 3-4
9 taco shells 
200g 7,5 oz of steamed salmon fillets 
1 mango 
10 cherry tomatoes 
1 shallot 
The juice of 1 lime 
Green salad 
2 avocados diced

Preheat the oven to 180° C.
Place the Taco shells on a baking sheet along with the salmon fillets. 
Heat for 3 minutes.
Meanwhile, finely chopped the shallot, the tomatoes and the mango. 
Combine those ingredients together. Add the lime juice to taste.
Set aside.
In a bowl, add the avocado to the green salad and season with your own dressing.
Bring out the taco shells and fill them up with some pieces of salmon and the mango salsa.
Serve immediately and eat with the avocado-salad.
