SPRING SANDWICH 
(WITH HOMEMADE MAYONNAISE EXPRESS)

I love to stroll around any wonderful parks London has to offer with my friends when it is sunny. We enjoy our little homemade "popotte" and we talked, talked and talked (but just a little bit at the end...;). It's always funny to see what the others bring: it says a lot about their personality. One of my friend  will have everything tidy in little plastic boxes, the other one will have something she bought earlier on, an other one will bring only carrots and broccoli with houmous to finish afterwards our sandwiches, etc... Last time I brought this lovely sandwich that I shared and everyone agreed that it was yummy...
PS: Of course not, Caroline-Auguste, I am not talking about you...

Gluten-free version
Use gluten-free brown baps from Marks and Spencer instead of the bread roll.
Follow the original recipe then.



SPRING SANDWICH 
(WITH HOMEMADE MAYONNAISE EXPRESS)
A quick glance in your kitchen...

In your fridge
Egg yolk
Turkey
Lettuce leaves
Fresh ginger
Cucumber
Chilli
Carrot sticks
Coriander leaves
Lemon juice

In your cupboard 
Bread roll
Olive oil
Mustard powder

SPRING SANDWICH 
Serves 1
1 bread roll (with rosemary for me) 
2 tbsp of homemade mayonnaise (see the recipe below) 
1 piece of breast turkey (cooked) 
2 lettuce leaves 
1 cm of freshly grated ginger 
A few slices of cucumber 
1 chilli (optional) 
A few carrot sticks :)-
A few coriander leaves

Open the bread roll. Spread the mayonnaise inside.
Plate the lettuce then the turkey, ginger, cucumber, carrots, chilli and coriander inside.
Set aside in the fridge before eating it.

HOMEMADE MAYONNAISE EXPRESS
For a little jar

1 pasteurized egg yolk
25cl of olive oil
Half a lemon juice
1 tbsp of mustard powder (or normal mustard)

Put all the ingredients in a dressing plastic jar.
Run continuously the hand blender until the mixture becomes a kind of mayonnaise.
Cover and chill.
Always keep in the fridge.
Discard after 2 days.
