SALMON WITH SHIITAKE

When my children's friends stayed for supper after a playdate, I tend to propose this recipe. So easy to do, they even offer to help me with the papillotes... Papillotes are like parcels for the children so they are pleased to open them...and eat with fun...
Shiitake mushrooms are a nice alternative to plain buttons ones! But, take any mushrooms you fancy...

Wine pairing : Bordeaux sec (White) from Bordeaux.

Use pure quinoa instead of couscous...


SALMON WITH SHIITAKE
A quick glance in your kitchen...

In your fridge
Salmon filets
Shiitake mushrooms
Crème fraîche

In your cupboard 
Onions
Whole wheat couscous
Foil

SALMON WITH SHIITAKE
Serves 2
2 salmon filets 
150g 5 oz of Shiitake mushrooms 
1 crushed garlic clove
4 tbsp of crème fraîche 
100g 3,5 oz of onions (frozen for me) 
Whole wheat couscous 
2 squares of foil 

Fry the garlic and the onion in a frying pan for 2 minutes.
Add the mushrooms to the pan and cook them 5 minutes.
Preheat the oven to 200° C.
Put each salmon filet in a square foil to make a papillote.
Place some spoonful of the mushrooms mixture on the top of each salmon.
Add 2 tbsp of crème fraîche on each salmon filet.
Close the papillotes.
Bake for 10-15 minutes. 
Meanwhile, bring the water to the boil for the couscous.
Serve the salmon with the couscous.
