SERRANO HAM, SWEET POTATOES, AUBERGINE AND FETA CHEESE

This combination is AWESOME! 
The match between the sweet potatoes and aubergine is divine. The giant couscous goes so well with the Feta cheese. Add the perfect Serrano ham at the end with a lovely hazelnut oil dressing and you have a salad made, nearly, in heaven!
Jamón Serrano is a very delicate Spanish ham. It is dry-cured for a minimum of 14 months and is considered to be one of the best in the world... 

Wine pairing : Collioure (Red) from Languedoc-Roussillon.

IN YOUR FRIDGE
Serrano Ham
Aubergine
Feta cheese
Serrano ham
Mustard

IN YOUR CUPBOARD

Giant couscous
Hazelnut oil
Balsamic vinegar
Olive oil

SERRANO HAM, SWEET POTATOES, AUBERGINE AND FETA CHEESE 
Serves 4-6 
500g 17,5 oz of sweet potatoes
Olive oil 
1 aubergine 
100g 3,5 oz of giant couscous 
100g 3,5 oz of feta cheese 
A few slices of Serrano ham.
Dressing
3 tbsp of hazelnut oil 
2 tbsp of balsamic vinegar 
1 tbsp of mustard.

Preheat the oven to 210° C.
Using a food processor, slice the aubergine and the sweet potatoes.
Put the sliced vegetables in a large roasting tin. Drizzle with olive oil.
Cook for 15 minutes.
Meanwhile, bring water to the boil. 
Put the couscous in a little bowl and recover it with boiling water. 
Simmer for 5 minutes. Drain.
Prepare the dressing. 
Combine the hazelnut oil with the balsamic vinegar and the mustard. Set aside.
In a lovely presentation bowl, put the cooked vegetables, the couscous and the feta cheese. 
Combine well. Keep it in the fridge.
Drizzle with dressing and add the Serrano ham just before serving.
